The hardest part of this recipe is cutting the carrots into sticks. You’ll want them to be about 2 inches long, and relatively thin so that they’ll roast more quickly.
Once your carrots are chopped, whisk together the olive oil, honey, ground black pepper, salt, and cayenne pepper. Drizzle the mixture over your carrots and toss them to coat. Spread your carrots evenly onto a lined baking sheet and roast at 400 degrees Fahrenheit for 15-20 minutes, or until carrots can be easily pierced with a fork.

Spicy Honey Roasted Carrots
Ingredients
- 1 lb large carrots peeled and chopped into ~2″ sticks
- 3 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with foil or parchment paper.
- In a small bowl, whisk together olive oil, honey, ground black pepper, salt, and cayenne pepper until combined.
- Pour mixture over carrots and toss until evenly coated.
- Spread carrots evenly onto prepared baking sheet and roast for 15-20 minutes or until carrots can be easily pierced with a fork.
Notes
- To save time preparing vegetables, baby cut carrots can be used instead of chopping up large carrots.
