Spicy Shrimp, Green Bean, and Potato Skillet

This easy shrimp, green bean, and potato one skillet meal is ready and on your table in less than an hour. Plus, it has less than 10 ingredients!

I’m always a HUGE fan of easy, practical meals. That’s one of the reasons why skillet meals appeal to me so much. They’re generally easy to throw together and use just one pan for hassle-free clean up. My spicy shrimp, green beans, and potato skillet is easy, nutritious, and delicious. Win-win-win!

One of the best parts about this recipe is that it uses less than 10 ingredients. That means minimal prep work! All you have to do is chop the potatoes into bite-sized pieces, trim the green beans, mince the garlic, and juice half a lemon.

Once everything is prepped and ready to go, heat one tablespoon of your olive oil in a skillet over medium-high heat. Add the potatoes and saute until golden brown, or about 30 minutes.

About halfway through your cook time for the potatoes, add in the green beans and saute until tender, or about 15 minutes.

Once your potatoes and green beans are cooked through and can be easily pierced with a fork, remove them from the skillet and set aside. Add the remaining olive oil to the skillet and heat over medium-high heat. Once heated, add the garlic and saute until fragrant, about 30 seconds. Then, add the shrimp and saute until cooked through, about 2-3 minutes per side.

When your shrimp is cooked through, add your green beans and potatoes back to the skillet. Add the lemon juice and seasonings, and stir gently until the seasonings are well-dispersed. Remove from heat, and enjoy!

Ingredients

  • 2 tbsp olive oil
  • 8 baby yellow potatoes quartered
  • 1/2 lb green beans trimmed
  • 3 cloves garlic minced
  • 1/2 lb raw shrimp deveined, peeled, tails removed
  • 1/2 lemon juiced
  • 1 tbsp dried parsley
  • 1 tsp ground black pepper
  • 1/4 tsp red pepper flakes

Instructions

  • Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat.
  • Add potatoes and saute until golden brown, about 15 minutes.
  • Add green beans and saute until tender, about another 15 minutes.
  • Remove potatoes and green beans from skillet and set aside.
  • Heat the final tablespoon of olive oil in the skillet. Add garlic and saute until fragrant, about 30 seconds.
  • Add shrimp and saute until cooked through, about 2-3 minutes per side.
  • Add cooked potatoes and green beans back to skillet.
  • Add lemon juice, dried parsley, ground black pepper, and red pepper flakes and stir until well coated. Remove from heat and enjoy!

Notes

  • Top with sriracha or your favorite hot sauce, if desired.
  • If your shrimp are frozen, simply run them under cold water for 10-15 minutes to thaw.
